Jennifer Walker made these healthy and delicious chocolate chip cookies for Lunch Bunch. This recipe comes from the cookbook Cookies for Dinner.
Chocolate Chip Cookies
1/2 cup oil
1 cup honey
1/2 cup butter
1/4 cup water
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1/4 cup chopped pecans or walnuts (optional)
2/3 cup chocolate chips
4 cups grain mix flour (barley, millet, oats, rice, rye, wheat)
-measure oil and honey, pour into mixing bowl
-add butter and beat until creamy
-add other ingredients, gently fold in flour
-form into balls and flatten with a fork
-bake at 350 degrees for 10-12 minutes

Thai Peanut Noodles (Megan Sivert)
The recipe for the Thai Peanut Noodles I brought to Lunch Bunch today can be found here. I couldn't find Sriracha chili sauce at Clark's, but there were several other kinds of chili sauce in the Asian section. I ended up buying something called "Chili Garlic Sauce" that had a picture of a chicken on it. It's very spicy, so use caution!

Cafe Rio Pork Salad (Megan Sivert)
There are many recipes available online for Cafe Rio Pork Salad. Do a Google search and you're sure to find something that will work for you. I'm not very good at following recipes closely, but when preparing the salads for last night's Enrichment meeting, I relied heavily on the recipes found at this blog. It provides a really good explanation of everything that goes into the salads.
With the pork, I essentially used the recipe available on the blog I just linked, but I didn't bother marinating it first. I just cooked it in some Coke and water for 12 hours, shredded it, mixed in the sauce and let it cook for a few more hours. I also didn't use as many green chiles as that recipe called for, but if you like it spicy than go for it! For the dressing, I followed the recipe with the exception of the jalapeno, which I omitted.
You can find a good explanation of how to make the corn tortilla strips at this blog. For the tortilla that goes under the salad, I highly recommend using the uncooked Tortilla Land tortillas from Costco if you can get them. If you're at a Costco stock up. They freeze really well. Sysco also sells uncooked tortillas, but I can't vouch for those.
Hmm, I wonder if there's any chance Cafe Rio will ever open a Blanding location? A girl can dream right!
